When "finish him" appears hold LP and move to the back off the screen, 
press B,B,D,F and release LP.
Sub Zero should throw a small ice ball at your opponent and His/her torso 
will explode, leaving His/Her legs standing.

Sub Zero: Fatality 2:
Platform: Super Nintendo
when "finsh him" appears stay out of sweep range and press F,F,D,HK. this 
will super freeze him/her (Note: if you hit your opponent at this stage 
he/she will unfreeze and just die as usual and if you leave them standing 
they won't fall down just stand there frozen.)
then you can do Fatality 1 or jump next to your opponent and press F,D,F,F,HP. 
this will result in Sub Zero uppercarting the super frozen opponent into 
smithereans, leaving frozen legs standing.
